Hibiscus (Zobo leaves)

Start by peeling the pineapple, orange, watermelon, and cucumber. Set the peels aside, as they will be used to enhance the flavor of your Zobo drink. In a large pot, add the hibiscus leaves along with the pineapple and cucumber peels. Add a few cloves to spice up the taste. Pour in enough water to cover the ingredients and bring it to a boil. Let it simmer until the hibiscus leaves release their deep red color and the flavors are well infused.

While the Zobo base is cooking, blend the pineapple, orange, cucumber, ginger, and dates separately until smooth. Each fruit will add its unique flavor and natural sweetness to the drink. 

After blending, extract the juice from each fruit by sieving it through a fine mesh or cheesecloth. Discard the pulp and set the juices aside. Once the Zobo base has finished cooking, strain it to remove the hibiscus leaves, peels, and cloves. Now, add the extracted fruit juices to the strained Zobo base, stirring well to combine all the flavors.

Allow the drink to cool to room temperature, then transfer it to the fridge to chill. Serve cold for a refreshing and naturally sweet beverage.
