🌶️ nkuobi Peppered Cow Feet

Ingredients

1 kg cow feet (cut into pieces)

5–6 fresh peppers

2–3 large tomatoes

1 large onion

2–3 cloves garlic

1 small piece ginger

½ cup vegetable oil

1 seasoning cube

Salt to taste

1 teaspoon curry or thyme (optional)

½ cup stock from the cooked cow feet


👩🏽‍🍳 Method

1. Wash the cow feet thoroughly and put them in a pot.


2. Add chopped onion, garlic, ginger, salt and seasoning cube. Add enough water to cover them.


3. Cook until the cow feet become very soft and tender. This can take 1½–3 hours depending on the cooking method. Add water when necessary.


4. While it cooks, blend the tomatoes, pepper and half of the onion. Don't make it too watery.


5. Heat the vegetable oil in another pot. Add sliced onions and fry briefly.


6. Add the blended pepper mixture and fry until the sauce becomes thick and the raw tomato smell disappears.


7. Add some cow-foot stock and season to taste. Allow it to simmer for about 5–10 minutes.


8. Add the cooked cow feet and mix thoroughly so the pepper sauce coats every piece.


9. Cover and simmer for another 5–10 minutes, allowing the cow feet to absorb the pepper sauce.

 

🔥 Tip: For that really delicious peppered meat taste, allow the sauce to become quite thick before adding the cow feet. You can also grill or lightly fry the cooked cow feet for a few minutes before putting them into the sauce.
